Burrito Bowl Recipe with Ground Beef

Ingredients

  • 1 lb. ground beef
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon smoked paprika
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup diced red onion
  • 1/2 cup diced bell pepper
  • 1/2 cup corn kernels, canned or frozen
  • 1/2 cup black beans, canned or cooked
  • 1/2 cup salsa
  • 1/2 cup shredded cheese
  • Optional toppings: diced avocado, diced tomatoes, chopped cilantro, sour cream

Instructions

1. Heat a large skillet over medium-high heat. Add the ground beef and cook, breaking it up with a wooden spoon, until it’s no longer pink, about 5 minutes.

2. Add the chili powder, cumin, garlic powder, onion powder, smoked paprika, salt, and pepper to the beef. Stir to combine and cook for another minute.

3. Add the red onion and bell pepper to the skillet and cook until the vegetables are softened, about 5 minutes.

4. Add the corn and black beans to the skillet and stir to combine. Cook for another minute.

5. Remove the skillet from the heat and stir in the salsa. Divide the beef mixture among four serving bowls and top with shredded cheese.

6. If desired, top with diced avocado, diced tomatoes, chopped cilantro, and/or sour cream.

7. Serve warm and enjoy!
